I’ve always had a real love for mushrooms, especially when the colder months roll in. They’re a real comfort food in our house especially being an Italian household, they add a lovely richness to all sorts of winter warmer dishes. In Italian cooking mushrooms are a key ingredient, bringing out that rustic earthy flavour that’s perfect for this time of year. Whether I’m making a rich mushroom risotto, a creamy Italian sausage and mushroom pasta, tossing them simply with butter, garlic and herbs or throwing them in a hearty stew they just seem to make everything that bit richer and satisfying.
Mushrooms have been a regular feature in my cooking for as long as I can remember and they always remind me of this time of year, I find they are not just an ingredient, but a seasonal tradition in my cooking. There’s something special about cooking with them in colder weather that makes every meal feel just a bit cosier. They’re brilliant in everything from simple weekday dinners to dishes for special occasions. They’re so versatile and bring such a great depth of flavour that makes every meal with the family feel that more special.
