Step 1.
Pull oyster mushrooms into strips and mix with oil, half of the Hoisin sauce, and five spice blend in a bowl.

Step 2.
Sprinkle cornstarch over the mushrooms, mix well, and place them on a baking tray. Bake at 180C for 15-20 minutes until crispy.

Step 3.
Slice the cucumber and spring onions.

Step 4.
Toss the baked mushrooms in the remaining Hoisin sauce.
Warm up the duck pancakes, then assemble the pancakes with the mushrooms, cucumber, and spring onions.
