of white mushrooms
2 tbsp
unsalted butter
1
medium shallot, thinly sliced
0.5L
of chicken stock (or vegetable stock for a veggie version)

cup orzo
2
cups baby spinach

Step 1.
Chop up the shallots and the mushrooms.

Step 2.
Melt butter over medium heat, swirling until foam subsides, it should look brown and smell nutty (~3-4 minutes).

Step 3.
Add in shallots and cook until softened (~2 minutes), season
Then add in the mushrooms and cook for another 2 minutes then add the chicken (or vegetable) stock, and bring to a simmer.

Step 4.
Stir in orzo and cook until orzo is tender based on package instructions (~10 minutes), on medium low.
If it’s looking too dry, add in another half cup of water.
Stir in spinach and mix until spinach softens.
