button mushrooms, diced
4
small shallots, diced
2
garlic cloves, minced
2 tbsp
butter
3 1/2 tbsp
plain flour
500ml
milk

cheese
Salt, pepper
For the coating:
3 heaped tbsp
plain flour
1 tbsp
plain flour mixed with 150ml milk
4 tbsp
panko breadcrumbs
Recipe

Step 1.
Add butter, shallot, mushroom and garlic to a large pan and place over medium heat.
Cook for a few minutes until the mushrooms are cooked and the shallots are translucent.

Step 2.
Dump in flour and stir vigorously, cook for a couple of minutes until it starts to smell nutty.
Slowly whisk in the milk to make a thick mixture.
Season with seasonings and cheese.
Pour into a cool dish, once at room temperature refrigerate for at least 4 hours, ideally overnight.

Step 3.
Roll 1 large tbsp of the mixture in flour to desired shape, coat in milk mixture and finally breadcrumbs.

Step 4.
Deep fry in hot neutral oil for a couple of minutes until golden.

Step 5.
Serve with mayo and cheese.
