Balsamic vinegar mushrooms and crispy bacon on spelt bread

Recipe

Step 1.

Preheat a grill pan to high heat and grill the bacon for 4-6 minutes. Set it aside.

Step 2.

Heat the olive oil and butter in a frying pan and add the sliced mushrooms. Toss the mushrooms and leave them to cook for a few minutes on medium-high heat. Tossing them again and cook until they are tender (4-5 minutes).

Step 3.

Add the balsamic vinegar, soy sauce and pepper to the pan and toss so the mushrooms become coated in the sauce. Cook for a further few minutes.

Step 4.

Toast the bread and top it with the raw baby spinach, bacon, and mushrooms. Serve with some chopped parsley if desired.
