Portobello mushrooms, thinly sliced

orange (juice and zest)
1 tbsp
olive oil
Seasoning

Cuban Rolls or hoagie Rolls (store bought)
2 tbsp
unsalted butter, softened
4 tsp
yellow mustard
4 slices
Swiss cheese

bread and butter pickles, sandwich-sliced
Recipe

Step 1.
Mix mushrooms, orange juice, zest, and seasoning of your choice in a medium bowl.

Step 2.
Cook mushroom mixture in an even layer on a Pan.

Step 3.
Meanwhile, slice rolls in half, spread butter on outsides.
Spread 2 tsp mustard inside each roll, add 2 slices Swiss cheese per sandwich and 2 pickles.
After about 15 minutes, remove mushrooms from the pan and divide between sandwiches.

Step 4.
Wipe griddle clean, place assembled sandwiches and press down with spatula.
Cook 3 minutes each side until golden brown and cheese is melted.
Slice diagonally and serve warm.
