Recipe
Step 1.
Preheat the oven to 200°c.
Step 2.
Place a saucepan over a medium heat and cook the pancetta until crispy. Remove it from the pan.
Step 3.
Add the mushrooms to the pan and season them with salt and pepper. Cook the mushrooms until golden then remove the pan from the heat.
Step 4.
In a medium bowl, whisk together the eggs, chopped spring onions, grated cheese, garlic powder, salt and pepper. Then stir in the crispy pancetta and the mushrooms.
Step 5.
On a baking tray, place the bell peppers cut side up. Fill them with the mixture, and bake in the oven for 35-40 minutes until the mushrooms are cooked through.
