European Mushrooms take the Spotlight at Board Bia Bloom

European mushrooms kicked off summer in style in Ireland,

By partnering with ambassador Maria Harte to showcase European mushrooms at the Board Bia Bloom Festival in Phoenix Park, Dublin, over the June Bank Holiday weekend.

Popular Irish influencer Maria Harte, known for her simple but impactful recipes, was onstage at Bloom on Thursday the 29th of May, lighting up the stage at the ‘Horticulture is Life’ stand with her dynamic cooking demonstrations. Visitors learned how to recreate her golden, flaky chorizo and mushroom picnic pies, a perfect dish for any picnic or light lunch with family and friends.

Chorizo & Mushroom Hand Pies

Ingredients:

  • – 1 tbsp olive oil
  • – 1 small onion, finely chopped
  • – 1 garlic clove, grated
  • – 120g cooking chorizo, finely diced
  • – 300g European chestnut mushrooms, finely chopped
  • – 1½ tbsp tomato purée
  • – 100g mascarpone
  • – Salt and black pepper
  • – 2 sheets of ready-rolled puff pastry
  • – 1 egg, beaten
  • – 2 tbsp grated Parmesan

Steps:

  • 1. Sauté onion in olive oil for 5–6 mins. Add garlic and chorizo, cook 4–5 mins more.
  • 2. Stir in mushrooms, season well. Cook 8–10 mins until softened and dry.
  • 3. Add tomato purée, cook 1–2 mins. Off the heat, fold in mascarpone. Let cool.
  • 4. Cut each pastry sheet into 4 long rectangles (8 total). Spoon filling one half of each.
  • 5. Brush edges with egg, fold over and seal with a fork. Chill while you heat the oven to 200°C (180°C fan).
  • 6. Brush with egg wash, sprinkle with Parmesan, bake 25–30 mins until golden.
