Recipe
Step 1.
Preheat the oven to 200°c. Place the cherry tomatoes in an oven dish and drizzle them with olive oil. Bake them in the oven for 15-20 minutes, until they start to blister.
Step 2.
Place a large frying pan on a medium heat, and add olive oil. Add the onions and garlic, and once they are soft, add the mushrooms. Cook until the mushrooms are golden brown.
Step 3.
Break the eggs into a large mixing bowl and whisk them together. Add the cooked mushrooms, courgettes, feta cheese, herbs, salt and pepper. Stir to combine.
Step 4.
Remove the dish from the oven, turn the tomatoes to check they aren’t sticking, then pour the egg mixture over them. Bake for approximately 25 minutes at 180 °c or until the eggs are cooked through. Garnish with more feta cheese.
