Recipe
Step 1.
Preheat the oven to 200 °c. Arrange the bacon slices on a rimmed baking sheet lined with parchment paper. Cook at 180°c for 20 minutes until crispy. Transfer the bacon to a plate lined with paper towels.
Step 2.
Place a large frying pan on medium heat, and add the 2 Tbsp of olive oil. Add the mushrooms and cook until golden brown. Season with salt and pepper.
Step 3.
Combine the spinach leaves, goat cheese, and onions in a large bowl. Then add the mushrooms and the bacon.
Step 4.
In a small bowl, stir together the remaining of olive oil, balsamic vinegar, garlic powder and salt and pepper to make a dressing. Add this to the large bowl and toss to combine.
