Recipe
Step 1.
Add the oil to a large frying pan over a medium heat. Once the oil is hot, add the mushrooms. Stir them occasionally and cook until tender (about 8-10 minutes). Season with salt and pepper.
Step 2.
Place the raw eggs, milk, mustard, herbs, garlic, spices, salt and pepper into a shallow baking dish and whisk them together. Press the slices of bread into the egg mixture to soak. Flip each slice so that each side soaks for about 1 minute.
Step 3.
Place a large frying pan over a medium heat. Add 4 tablespoons of the butter and let it melt. Carefully transfer the soaked bread slices to the pan and cook them for 3 to 4 minutes or until nicely browned. Flip each slice over and cook until browned on both sides. Repeat until all the bread is cooked.
Step 4.
Top each serving of French toast with a fried egg, some of the sautéed mushrooms, and a sprinkle of salt, pepper and fresh thyme.
